450 gms. Spiral Pasta 1/4 cup olive oil 3 cloves garlic ( crushed)

2tsp very finely chopped fresh chilly 1 cup fresh parsley leaves (

roughly chopped) 1/2 cup fresh basil leaves (shredded) 1/2 cup

fresh oregano leaves(roughly chopped) Salt and pepper to taste.

150 gms fresh ricotta cheese.[cut into small cubes] ( it is moist

fine white cheese with a sweet delicate flavour and texture is

creamy--if not available any white cheese can be used)

Cooking Method

Add Pasta to a large pan of rapidly boiling water and cook until

just tender. Drain and return to the pan. When pasta is almost

cooked, heat oil in a non-stick heavy based frying pan. Add

garlic and chilly to pan and saute for one minute over low heat.

Add oil mixture, herbs, salt and pepper to pasta. Toss well until

the mixture coats pasta thoroughly. Add cubes of ricotta

cheese and serve immediately.
